Hope we had a great weekend. For a while now I haven’t shared a recipe but the blog has been working. So many things in the works, we will get to know about it soon enough! Meanwhile, did we get to read Fridays post? Please do!
Todays recipe is a part two of the simple fried rice I made a while back. I shared that recipe because a reader at the time requested it, ideally I felt fried rice was basic so no need to make a recipe out of it. This one should have come soon after but oh well, so many recipes to share…which to pick! I shared the simple one first so that when this one comes along it’s basically adding more ingredients, using a different kind of rice and adding sesame oil which gives it that Chinese restaurant taste!
There’s no limit to the different kinds of vegetables you can add, I’m not a huge fan of runner beans so I didn’t add it but you go ahead and do so, now let’s face this special fried rice.
Ingredients : ( serves 8 )
4 cups jasmine rice
600ml (2 1/4 cups) chicken stock
4 Eggs
500g Shrimps
6-7 medium sized carrots
1/2 cup peas
1/2 large cauliflower
250g (1tin) Sweet  Corn
1 small Chinese cabbage
1 medium sized onions
2 fresh pepper (atarodo)
2 tablespoons soy sauce
1 tablespoon sesame oil
1 cooking spoon vegetable oil
2 chicken seasoning cubes
1/2 teaspoon thyme
Salt to taste
I used this brand but any basmati rice will workf
Method :
Wash and cut the onions, pepper and vegetables into small sizes, set aside.
Boil rice with 4 cups of water for starters, once that is about to dry up, add the chicken stock and let it cook the rice, if it’s not as soft as you want it to be add a little water at a time until it’s done.
Simultaneously:
Beat the eggs with white pepper and salt. In a ‘good’ non-stick pan, add 1 cooking spoon of water and two drops of oil, once the water is hot and bubbly, add the egg and let it boil/fry. Once you notice some parts of the egg cooking, stir it and keep stirring and breaking up the egg until its completely done and all the water dry.
Heat the vegetable oil in a big pan, start frying the vegetables one by one starting with the hardest. I started with onions then the cauliflower, shrimps, fresh atarodo, thyme and seasoning cubes.
The carrots and peas went in next, after frying for 2 minutes add the soy sauce.
Turnoff heat then add the sweetcorn and green pepper, stir.
Add to the rice along with the scrambled eggs, stir until well mixed over low heat, add the sesame oil last, stir and turn off heat.Â
Serve immediately 🙂 .
