Been shuttling between Christmas shopping, visiting harrassing Nepa to give us light and taking recipe pictures! I got a few questions on how to make fresh coconut milk at home so before I share today’s recipe, I will share step by step on how to get fresh coconut milk which is also a major component in today’s dish to be shared later. I had started taking pictures of making coconut milk a while back but thought it unnecessary so I didn’t take pictures of the last steps. I did that yesterday so here goes!
For 1.2 litres of watery Coconut Milk or 1 cup of thick Coconut Milk
1 1/2 large coconuts
1 litre of hot water.
Method:
Grate coconuts using the smallest part a grater. I got 5 cups of grated coconut.
Divide into two and blend in batches with 3 cups of very hot water each. Blending helps the coconut flesh release more milk.
After blending pour into a bowl and add 4 more cups especially if you are using it in a gravy but if you want to combine it in a fruit juice or for Zobo Smoothie then don’t add any more water, cover the bowl and allow it sit for about 20 minutes.
Strain using a cloth seive or any seive that will only allow liquid through.
It’s ready for use for gravy or curry but in Zobo Smoothie for instance, pour the milk into a glass and let it cool down completely undisturbed, the thick creamy milk will rise to the surface, carefully use a spoon to scoop it out.
