Hello people!
In line with January’s healthy recipes, salads is a must because vegetables are so cheap, fresh translucent skinned carrots, huge green peppers, I tell you, this is salad season!
I walked into Shoprite the other day and found this lovely herb on the shelf, pity I didn’t get two bags of it π . I sha made some awesome recipes from it, these nice vinaigrettes included.
Garlic chives have a slight garlic/onion flavour which I thoroughly enjoyed and I’m sure you will too π . I know we all know how to make salad, will just include it for the vinaigrettes sake. Two different vinaigrettes, one with salad cream, the other with olive oil simply pick one.
Ingredients: (serves 2)
5 lettuce leaves
4 carrots
1/4 medium cucumber
4 tablespoons sweet corn
2 tablespoons tuna
1/4 medium green pepper
1 hard boiled egg
1 large firm tomato
For vinaigrettes:
1 small bunch garlic chives
1 tablespoon olive oil
2 tablespoons salad cream
4 tablespoons lemon juice
1/4 teaspoon dry Cameroon pepper
Salt to taste
Method:
Soak all the vegetables in salt water for at least 20 minutes. Rinse off and put in strainer so excess water can drip.
Arrange your salad anyhow you want. π
In a small bowl start mayonnaise vinaigrette. Mix salad cream, half the pepper, salt to taste, 2 tablespoons lemon juice and 1 tablespoon chopped chives.
In another bowl, mix olive oil, remaining pepper, salt to taste and 2 tablespoons chopped chives and two tablespoons lemon juice.
