Today’s Summer treat is Banana cinnamon muffins. Very easy to make and can be enjoyed by kids and those who bake them ;-). No need for yigiyaga today, let’s dive straight into the recipe. 😀
Ingredients: (12 muffins)
3 overripe bananas (even if its turned black its okay)
1 1/2 cups flour
1/2 teaspoon cinnamon powder
1 1/2 tablespoon baking butter
1 tablespoon mixed fruit (raisins etc)
2 tablespoons brown sugar
1 tablespoon white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
12 cupcake paper liners
Method:
Pre-heat oven. Beat egg, set aside.
Mix all your dry ingredients together – Flour, cinnamon, baking powder and baking soda, set aside. Melt the butter then while its still warm add the sugars into it so they can all melt together.
Marsh the bananas until soft and mushy then add it to the butter mixture.
Add the mixed fruit to the butter banana mixture.
Create a well in the centre of your dry Ingredients and add the butter banana mixture.
Mix together using a wooden spoon. Once combined add the beaten egg, mix but don’t overwork it.
Line your muffin pan with cupcake liners and fill 3/4 of each one.
Bake for 15-20 mins or until toothpick inserted comes out clean. You can start checking after 15 mins.
Enjoy with a cup of green tea. 🙂
